Believing you can, you can…believing you can’t, won’t change that you can…it just hides it…
I start my day having a conversation with the universe and in doing so this reinforces that I can arise to cook another day…sometimes bouncing around at an angle, catch hot pans as they sail by, lurching for that bowl full of sauce can be a challenge to the can part…but once I come out of the aft cabin and look at the star filled sky knowing that my ancestors probably gazed upon these same stars I know that today again I will never be defeated…
Sunday Eliza, Sam, and Vincent landed a beautiful Mahi Mahi…it was about 12 to 15 pounds…Chris was kind enough to gut and clean it I popped it in the freezer and last I filleted it and coated it with coconut and crushed pistachios and sautéed it served it with saffron and Ethiopian season rice, bake asparagus with a caper sauce and a homemade bread…
As we have been bouncing along, things spill, things overturn in the refrigerator, sleep is interrupted, we are out of eggs, sometimes I have brain farts…. but I wouldn’t change one second for the experience…having the opportunity to share the mission we have been entrusted to carry…to represent the ancestors…”saving the world one bite at a time”
This is what has come out of the galley so far this week…
Easter Sunday- Breakfast-blueberry coffee cake, cereal, milk, juice…lunch-grilled cheese, Miso veggie rice soup, ice tea…dinner-roasted duck, cheesy bowties, sautéed veggies, fish for non meat eaters, dinner rolls
Monday-breakfast-oatmeal muffins, bacon, cereal, juice, milk…lunch-tamale pie, refried beans, ice tea…dinner-mahi encrusted with coconut and pistachios, saffron ethopian rice, bake asparagus, with caper sauce, homemade bread, ice tea.
Tuesday-breakfast-raisin coffee cake, cereal, milk juice, fruit cocktail, yogurt…lunch-duck casserole, cream of mushroom soup, ice tea…dinner-meat sauce, sausage, pasta, salad, homemade bread and garlic butter, ice tea.
Aloha kau kou to my nuggets, all my Ohana, SGI family…Don the “Wizard” of the planetarium mahalo for your lovely and inspiring note… to Mr. Marr and family I hope that your are well and keeping a breast of this wonderful adventure that you set into motion so many years ago…and to my ancestors who prepared this road for me to travel and share your stories with others and prepare it for the future generation to come…
